At least as of a year ago, you could still buy Lightroom 6 as a standalone. When I bought my D850, that's what I did. When I bought my Z6, I just had to accept the fact that I would have to convert the raw to DNG format in order to use that camera with LR. It works just fine. Not sure how much longer Adobe will continue to sell LR6 by itself.
Personally, I hate the concept of a subscription for life. Miss a payment and you can't do anything with your images. Of more concern is that once they manage to hook everyone, they can then jack the price as much as they'd like and we're all just screwed. Flickr is doing that now. A year ago, they forced everyone with more than 1,000 photos (regardless of size) to buy a pro subscription at $49.99 a year. Just recently, I renewed and got a letter from the CEO stating that Flickr is still losing money, and the price is going up by 20%. EXPECT that to happen with Adobe Products. Count on it. Just like the butt-holes that sell cable TV, they won't be able to resist the fact that they CAN jack up your rates every year without fail.
