The Varnished cab on Eureka is correct, and I believe is still the original cab from all those years ago.
Existing Baldwin records from the DeGoyler Library help shed light on how these machines were constructed. For every locomotive order the purchaser could outline specifics from the catalog. They would send the order to Baldwin and it would be filled to that customers specification. Paint information is included on the sheet, for example I am attaching a scaled down copy of a similar 4-4-0's Baldwin spec sheet. This sheet covers 3 locomotives North Pacific Coast #'s 10 - 12, all are 8-18Cs like Eureka (and her sister Palisade).
These locomotives were painted in "Style 1" which was Baldwin's standard paint style for locomotives of this period and painted Lake (1875 - 1877). You can notice that the cabs are outlined as "Walnut", if they had been painted they would note; "Ash, Painted" or similar.
On this locomotive the paint is spelled out as Lake + Gold Style 1, the same style as the E&P 4-4-0s.
The spec sheets are wonderful resources as they outline what the locomotive was equipped with, what it was numbered, painted and what fuel types it was built to use. We are currently working to build an archive of them on PacificNG, for those of you interested in D&RG locomotives there was an excellent article in the Prospector by Jim Wilke a few years back which goes over the Baldwin paint specs for D&RG locomotives starting with "Montezuma" and ending with the class 60 locomotives.
In the future I will be working with Jim Wilke and others to compile a Baldwin Style guide which will be available on PacificNG in the future.

These renditions by David Fletcher cover All of the paint variations worn by these locomotives on the D&RG as well as RGS #14.
East Broad Top 0-6-0T #6(ng) was of the same locomotive class, with differences in appliances and paint style. It is available on the same illustration as D&RG 20 - 21.
For the South Park fans, the DSP&P 2-8-0s were green as delivered, painted Olive Green, Style 103:

This paint scheme was applied to many locomotives from East Broad Top 2-8-0s to South Pacific Coast #13.
Each of these illustrations was heavily researched and is about the most accurate rendition of these paint styles available currently.
