beets are tough, they used loaders to dump them into a gondola, and as the beets would do quite well outside I expect they were just shovelled from a NG car to a standard car.
Gilsonite being inflammable ( and pricey ) and having various grades, that needed to be stored inside if it was hanging around for any time , probably another reason they carted it in boxcars .
