I remember one of the changeable valves being pointed out to me within the last 10-15 years. As I recall, this was on the tender of the ex-F&CC/Uintah/E-N 2-8-0 in Nevada.
I have not heard of a recent book on the history of the air brake. There was an article series begining in the October, 1975 issue of TRAINS MAGAZINE (next issues Dec. '75 and Jan. '76) about Westinghouse air brakes. It was written by David Blaine an engineer with WABCO.
My campanion on the above mentioned trip could probably do such a book, if he had the time and the interest. He has been studying and gathering information on air brakes since we was about 15 years of age (about 40 years ago). He says that Wabco will refer people, who ask about absolete equipment and systems, to him.
The Association of Railway Museums has a few repints about railroad airbrakes. One interesting one is a Soo Line book on airbrakes from 1912 this shows both the old triples and the newer triples; the old engine brake system and the 6-ET. Visit its website and then select "reprints."
