Not that bad, actually -
Back in the early days of the Fillmore & Western we used their little Porter 0-4-0 as a taxi to go across town to a place that had really good tacos & chili rellanos, but I don't remember actually cooking anything in her firebox. She was a wood burner, so we could have enhanced the flavors by changing the fuel — hickory, oak, lemon or even avocado. I would rate wood-burners tops, coal a distant second and oil-burners about negative ten for in-the-firebox cooking. OTOH, if you're just using the backhead as a hotplate, the fuel shouldn't matter at all.
