Beets would still be moving throughout the winter.
Beet growing is mostly gone in the area now. Now we harvest McMansions on one side of the street, and fracked oil on the other.
When I first moved to Northern Colorado in the 80's, beets were no longer hauled by the Great Western Railway of Colorado, but trucked. The sugar company would have beet dumps at various locations where the farmers would weigh and dump the beets onto the beet loader. Most of the time beet dumps were located next to a former siding on one of the local railroads. The beet loader created large piles of beets the were suppose to keep them from fermenting. Then throughout the winter, the sugar company would haul beets from each pile to the factory to be refined.
