The 3 foot gauge line from Cusco to Machu Picchu, currently being operated by Peru Rail.
The 2 foot gauge Darjeeling and Himalayan

Many other favorites have already been mentioned, but the Guayaquil & Quito is simply amazing. If they ever run a real steam charter there again, you must ride up the Devil's Nose on the pilot of the steam engine and again on the roof of a box car!
