I could never get too excited about trains in movies as they are usually all never portrayed correctly. A couple of my favorites however are"The Train" French train, and Von Ryan's Express, French and Italian sidestacker. Lots of good steam action in those and somewhat authentic.
Most of the others are "Hollywierd". I saw the recent Lone Ranger movie with Johnny Depp, and the train scenes are really goofy, but hey, I went to be entertained, and it was an entertaining movie. I don't expect Hollywood to get the train scenes right!!! Why would they start now!!
