I love Mexican food, and it varies depending on where you are. As far as smothered, there can be the option of red or green chili. In Denver, the green is normally hotter. It can even come in degrees, mild, hot, or a mix of the two. For what I have seen in NM, red is normally the hotter. if you can't decide in NM, ask for "Christmas", which is a mix of red & green. In Denver, I have been to one place that referred to their smothered burritos as wet, as their chili was wetter than most other places (more watery). To keep this on topic, rememeber, a smothered burrito after a lovely train ride makes the day even better!
