You're right, of course. Assume the third rail on the table is to the right when a narrow
gauge engine comes onto the table. If it is turned around 180° clockwise, the third rail
would now be to the left, and turning the table just a little more would line up the narrow
gauge rails with only a very slight kink. The longer the turntable, the less the kink - and
the Salida turntable could handle 2-8-8-2's

* In the situation described above, the common rail on the table would have to move another 20½ inches to line up with the third rail on the ground. Assuming a 100' table, that's a radius of 50' or 600", so arctan(20.5"/600") = 1.95°. Less than 2 degrees is not much of a kink
