You're lookin' at the knuckle of the locomotive I learned to operate in! This one has a notch in it, but still the same thing. You could get technical and talk about the knuckle or coupler face which would be the front part of the knuckle, but the movable part is a knuckle. The piece which locks the knuckle shut is the pin. Most couplers are movable too, i.e. they can swing with curves. I hope I haven't been hanging around Standard Gauge too much to give wrong info for NG but hope this helps.
