My first thought r.e. #1 was Sawpit, just outside of Placerville, but in the other direction (toward To-Hell-U-Ride).
And the term "Mystery Meat" reminded me of the two- or sometimes three-times-a-week protein course of meals at General Palmer's very own Colorado College in the early sixties. The head of food services in those days was a fellow named Torrins (we called him 'ptomaine Torrins'). IIRC he was later found guilty of embezzlement for taking kickbacks from a local packing house after paying for a significantly higher grade of beef than what was being served in the dining halls
