I was in Chama earlier this year for the school trains. I usually tried to eat within walking distance of teh depot, just because it was more convenient that way.
My breakfast was usually from the Rio Chama Espresso. Their food was good, especially the New Mexico Sunrise, and their coffee was good too. It also helps that it is walking distance from my hotel & the rail yard. The employees there are pleasant and good at their jobs. Good coffee in walking distance from the trains is a very good thing early in the morning.
I like to visit several restaurants, but the inconsistent hours at the Boxcar & Fosters didn't always make it easy. As for food and service quality, it has varied from year to year, but I'd give the upper hand to the Boxcar this year.
The Local is a more recent addition and their pizza and salads are very good. I like my red & green chilie, but if you want something different, The Local is a great option. It may be a bit healthier too.
The Hotel & Shops has good dinners, but it's not all that well known... yet.
I do recommend it highly. The food there is quite different from most of the options in town, so it brings some appreciated variety. The menu is different every time, so it is unlikely you would have the same meal twice in a visit.
When I visited Chama, the talk was that it is extremely difficult to find people who want jobs. (Sometimes finding employees who can pass a drug test can be a challenge as well. It's not a happy point, but it is relevant.) Restaurants can't get staff, hotels can't get people to work the desk or clean rooms, so some of the hotels are running at reduced capacity. It's not glamorous work, and most folks working those jobs won't be able to afford a Rolls Royce, but it is in demand.
If you visit Chama, talk to your hotel staff and find out the best dining options in advance of your arrival. You don't want to get into town and find the food options to be nill.
Still worth going!
