They didn't. Assumption seems to have been that passengers would eat before boarding or after detraining since 315 left Salida after breakfast time & arrived Gunnison before lunch time while 316 left Gunnison after Dinner(or Supper or whatever you want to call the evening meal) so no real need for the kind of cafe service offered on the San Juan. Note that fro through passengers changing to/from #'s 15/16 there was the Dining Room at the Hotel Monte Cristo in Salida.
