Not sure how long you're on Maui, but take a look at the Alexander and Baldwin Sugar Museum in Puunene. The looks to have a variety of historical equipment associated with sugar production and across the road the mill complex looks fairly complete but secure and the museum.

The problem is their hours, 10:00-2:00 Monday thru Thursday and I didn't find out it was there until we were leaving.
