Not usually noticed is that the Silverton's holding tanks are all emptied in Silverton while the train is on the wye. A local resident has had the contract for a number of years and has a special trailer he hauls with a pickup truck. He then empties the trailer into the Silverton sanitary system at a manhole near the ash pit on the wye. The train often stops at the station to fill up water tanks that run empty on various cars, usually a car next to an open car. There is a hose at the ready on the baggage door at the Silverton depot. Contrast that to Amtrak that hasn't had an operating water fountain on the California Zephyr in my several recent rides, and I'll be able to verify that again tomorrow as I head to California on Train 5.
