A very close second, Brian -
Cholula is definitely better known and more widely distributed than Pepper Plant, and is a far more acceptable substitute than Tobasco, IMHO. But nothing compares to Vera's home-made at Kelly's Café in Chama, as experienced in the 'Olden Days' of the D&RGW - genuine 'three-beer' chili.*
