From my visit to Chama last summer I would recommend either Fina's Diner or the High Country. Both are at the south end of town (across the street from each other in fact) where Hwy 17 meets Hwy 64.

I've heard good things about the Boxcar Cafe as well, but I didn't have a chance to try it.
