I am hopeful that the book, "Tren al Sol/Train to the Sun", written by Marcelo Meneses, may have some good info. Marcelo's brother Alfredo has been the guide for a number of rail tours of Ecuador and John Kirchner, an authority on Central and South American railroads has contributed. The book is available here.

The G&Q profile and station list has been posted on his website, so I am hoping the rest of the book is as good.

The attached map is from a 1927 US Department of Commerce book on South American Railroads. Many of the lines shown never were built, but I have highlighted the three major lines that were built. There were some lines serving the coast that lasted until the 1960's or 1970's but they were all gone by 1980.
