Greetings:

Two of those "dining cars" (probably Ogden/Dolores and Cimarron) ended up on the Nevada-California-Oregon Railway (N-C-O) in about 1911, where they also had buffet service. Prior to the N-C-O, the cars were on the Tonopah Railroad. They probably served food there as well.
