As noted previously, well do I remember Vera's chili at Kelly's Café in Chama.
Her "mild" chili was what we tenderfeet called "Three-Beer Chili", as it took at
least three beers to put out the fire - and in those days it was Coors.
Sadly, Kelly's burned down a few years ago. Rumor has it that the fire started
when Vera spilled some of her "medium" chili on the bare concrete floor
