I can't agree more with your commments and the loss of Vera, who was a mainstay in Chama for many years. Visiting Vera's was almost a primary reason to go to Chama, and hopefully, will still be.
As to you comment regarding "authentic" Mexican food in the Eastern part of the US of A, however, I can assure you that the influx of Hispanic culture has made an impact everywhere. The food served in the thousands of Mexican places out here is very much authentic "Mexican", and is prepared by bona-fide Mexicans. Hell, we have three places like that here in the small town I live in.
Much as I enjoy it, however, it is not the same Mexican food I miss so much from New Mexico, Colorado, Arizona, California, and Texas. And nobody ever did Green Chili better than Vera. She will indeed be missed.
