For one thing, they had steam engines -later diesel- inside, so they'd be a lot more resistant to fire, vibration, temperature extremes as stone structures. And there was a pump inside, that could freeze. Is a stone wall any more likely to keep the frost out? It would take a lot longer to cool down for sure...
