As for places to eat, in Durango, there is the Serious Texas BBQ, if you are into that sort of fare. Downtown there is The Lone Spur Cafe. I have had good meals there— particularly breakfast. I would have recommended the Hermosa Creek Grill in Hermosa, but I decline to do so as they are one of the parties suing the D&S RR for last year’s fire.
In Chama, there is Fina’s Diner for breakfast and lunch. For good New Mexican food, there is always Foster’s. I have heard good reports about Box Car Cafe, but need to try it myself. The last two times we have eaten at Elkhorn Cafe, it has been good. All the Chama restaurants come with a certain Chama ambiance and are not chains (except for Subway). The food is good though. I like that, but if you don’t, be advised.
Over in Antonito, I have had consistently good food at the Old Dutch Mill Cafe on the main drag through town. This was a favorite eatery of D&RGW crews and still serves up consistently good New Mexican food (with Chile!). Again, the small town “ambiance” thing applies. But if you want to experience the small town cafe feeling of the past— you can’t go wrong at the Dutch Mill.
We have a home in the area near Pagosa Springs, so I really can’t offer advice on places to stay.

P.S. In Alamosa, I recommend the San Luis Valley Brewing Company on Main Street. Good food and good beer— my wife really likes their Green Chile Beer. And they are a supporter and contributor of the C&TS 168 restoration effort!
