Some books to consider are:

"Slim Gauge Cars" Second Edition available from White River Productions
This staple bound book is a rolling stock plan book with plans for many different narrow gauge railroads. 128 pages. West coast railroads represented include SP, Carson and Colorado, White Pass & Yukon, Sumpter Valley and Oahu Railway & Land Company (far west coast?).

"Southern Pacific Narrow Gauge Locomotives and Freight Equipment Also Including the Carson and Colorado Railroad and the Nevada & California Railroad 1880-1960" Robert A Bader, published by the Southern Pacific Historical & Technical Society. Many plans in this book

"Slim Rails through the Sand", George Turner, Carson & Colorado and SP. This book had at least two publishers over time resulting in at least three editions and multiple printings. Baggage car, Business Car No 10, C&C Ventilated Car, Water car, A-Frame Gondola car, Combine-Caboose, Flanger 108.

"Southern Pacific Narrow Gauge", Mallory Hope Ferrell, published by PFM. "The Pacific Coast Railway", Kenneth E. Westcott and Curtis H. Johnson, Benchmark Publications. Drawings for cabooses, flat cars, box cars, gondola cars, tank cars, combines, baggage-mail, coaches, and Mow cars. Also locomotives, rail buses, and structures.

"Rails Sagebrush And Pine", Mallory Hope Ferrell, Golden West books. Sumpter Valley - Oregon Lumber Co Log car, Baker white Pine Lumber Co Camp car, SV Tank car, SV Stock car, SV flat car, SV box car, SV caboose no 5. Plus some engine drawings.

For Carter Brothers cars and some of the SPC rolling stock, consider the books that Bruce MacGregor wrote or co-authored.

"Narrow Gauge Portrait South Pacific Coast" Bruce MacGregor, Glennwood publishers - Carter Bros. Swing Motion Truck, 10 ton combination box car, 10 ton box car, SPC combination-caboose No. 47, North Pacific Coast RR Co coach No 34, Carter Bros. Passenger car truck. A Collectors Series edition of this book was also published with included loose leaf sheets of the book drawings reproduced in a larger size.

"A Centennial South Pacific Coast", Bruce MacGregor and Richard Truesdale, Pruett Publishing Company. This book reprinted the drawings from the previous book with greater clarity, and included a letter diagram for a SPC coach.

"The Birth of California Narrow Gauge", Bruce MacGregor, Stanford University Press. This book is the history of the Carter Brothers railroad related enterprises and in impact on transportation in California. NPC 8 ton combination box car, Monterey & Salinas Valley 8 ton box car, Monterey & Salinas Valley Combination Car No 1, Nevada Country NG 8 ton Flat car, SPC Box car 128, SPC Coach, Floor plan of narrow gauge coach, SPC Combine - Caboose 47 (detailed drawings), SPC 30 ft flat car, SPC 20 ton combination box car, numerous drawings of truck design evolution and some really nice 3-D renderings of wooden car and truck construction and of a Baldwin 8-18 C.4

There are other books published on west coast railroads which I have not included as my understanding of your request was for books that include several drawings of rolling stock rather than just one, or only locomotives.

Also check out the model magazine indexes for drawings and contact Coronado Scale Models in Phoenix as they usually carry loose leaf drawings from a variety of draftsmen who covered west coast narrow gauge rolling stock.
