If you can find one, the US military had speeders that were designed to be adjustable to a number of common gauges. The axles telescoped to slide in and out. They're out there, but they're not all that common.
An easier alternative is to build interchangeable running gear. I know of at least one chain-driven car with interchangeable axles and brake rigging.
Most folks who run two gauges have a car in each gauge. Like a lot of toys, it's hard to own only one motorcar.
