Short answer... your examples are Hollywoodesk caractratures... and not at all accurate...
The Fiddletown and Copperopolis is very loosely based on the Carson & Colorado... the C&C engines were Baldwin Green (tender tank, drivers, domes, pilots, frames, etc with planished iron jackets (dark metalic grey) with some brass and two color stiping.
On the C&C passenger cars were wine colored. Yellow was also common, but not green... I know of one 1882 passenger car in California in blue...
A few years earlier locomotives had more colors... look for photos of Eureka or the current restoration of Glenbrook at NSRM. Note that even when more decorated they didn't have red drivers... that dates to the Civil War...
