A good deal of the western slope of Colorado produced sheep in large numbers. Moffat County still is one of the largest sheep producing area in the state.
Funny, but I've never found lamb to be a very popular menu item in sheep raising areas, except with the folks who raise them. Best meal I've ever had bar none was in the sheep camp of an old Basque sheep herder, when I arrived at the camp just as he was pulling it off the fire. The Greek sheep ranchers' families in Moffat County put on a great lamb feed, too.
I've heard it said in many parts of the west that sheep and goats are raised for profit, and cattle for prestige. That may account for the preference for beef on the menu.
