As a tourist draw for Easterners, Try something like a night in a ghost town. Maybe let them stay overnight in Sublette with a few guides. Chuck wagon cook-out. A few old cow hands ("from the Rio Grande") and a demonstration of what the community did for the railroad?
A lot of people are still in awe of the "wild west." (not the Wild Wild West)
A week's trip from say ABQ to Espanola to C&TS to D&S to Mesa Verde and back to either ABQ or Denver would be good. Add in a day or two in a ghost town and maybe a dude ranch for the past and Espanola for the Manhattan project Maybe a visit to Roswell for a futuristic angle and the Painted Desert and Petrified Forest.
I'm not sure what would work but I just feel there's a lot in the area that might work as a guided tour.
My one visit to Chaco Canyon was awe inspiring.
