Does it always do picture in picture?
Expanding on Russ's idea I would use one camera wide for the guys in the cab, but zoom in enough that the subjects show up better, not turning to mud. If you can set the aperture on the camera, open it up to see the guys working, and leave the outside overexposed. Then the second camera can be mounted perhaps on the back of the cab roof. I would aim it to the right ahead, with the stack at the left of the view. But it will be tiny in that inset photo. Another idea would be to do views and do a split screen, which is kind of odd for widescreen stuff.
Or mount the second camera further back so perhaps you can see the firebox door open, and the stack at the same time. Personally I like seeing where you are on the railroad more than the other stuff, but if its the school and folks want souvenirs of themselves go tight on them.
