I'm sure 375 was scrapped for the same reason as all the other smaller engines, she became obsolete. Keep in mind most of the C class engines and K-27's were scrapped. The only reason 463 survived is because Gene Autry bought it and 464 survived because it lasted until 1957 as the Durango switcher and was then sold to Knotts along with 340 and 41. 346 was saved by Bob Richardson and we all know about 315. Everything else smaller than a K-28 went to the scrapper (save for 268 and 278) since the Rio Grande no longer had a need for small locomotives.

Dave, she was a C-25 and the only one at that. Rio Grande acquired her along with 360 and 361 from the Crystal River RR.
