The Strater Hotel does include a steakhouse, but the Diamond Belle Saloon also has a lighter dinner menu and I believe it includes meatloaf!

There’s a relatively new restaurant in the same block called the Lone Spur Cafe which fits the bill of what you’re talking about. It occupies part of the space of the original Francisco’s restaurant. Most days they are only open for breakfast and lunch, but if you’re here over the weekend I think they open for dinner on Friday and Saturday. I also believe it’s the current employer of legendary Durango waitress “Mama” Bea Williams:
