Union Pacific has their events, culminating in the arrival of 844 and 4014 in Ogden for a three-day event.
Golden Spike National Historic Site will most likely keep doing the same things they have always done on May 10th, but scaled up to account for the ridiculous number of people expected to attend. You will most likely have to park in Corinne or ATK Thiokol and be bussed in to the site.
The Railway & Locomotive Historical Society, Union Pacific HS, Southern Pacific H&TS, and National Railway Historical Society are all hosting their conventions in Ogden simultaneously with rumored joint activities.
Brigham Young University is hosting the Center for Railroad Photography and Art's convention and exhibition of "After Promontory" showing a number of incredible photos depicting how the transcontinental railroad impacted the nation and world. In addition, BYU's library has an exhibit from their special collections department of a number of important artifacts from the transcon, including 1868 Union Pacific elevation maps on rolled linen, and Charles R. Savage's photography journal opened to his May 10 1869 entry.
Kalmbach publishing is reportedly also sponsoring their own events relating to the anniversary.
In addition, the various Utah based railroad and model railroad companies (Heber Valley, ExactRail, Utah Transit Authority, etc.) are planning to participate in some way.
To make it Narrow Gauge Related, come to Ogden and you will see the recently completed tender of D&RGW 223 on display. Or you can ghost railfan the few dozen abandoned narrow gauge lines in the Salt Lake City and Utah County areas.
