As suggested above, I just used the advanced link under the useless SEARCH field at the upper right of the page, and found several previous posts related to your questions. The very first post on the 'Red Devil Coal Loader AFE Info' thread answers your question as to why the coaling trestle (NOT tipple) was replaced. I'll intersperse some other answers below.

The Latter.

Mostly from Monero, IIRC, and probably also from Hesperus until the demise of the RGS.

IIRC, during the fifties & sixties westbound n.g. freights were usually double-headed from Alamosa to Antonito. There both engines topped up water & coal and the helper was almost always moved back in the train before starting the long 1.42% climb to Cumbres.

IIRC mostly from Monero in the later years (see above). Others probably have more complete info.
